Chocolate Cheesecake

I have two favorite things in the world. (Well, out of deserts anyways!) 1. Chocolate and 2. Cheesecake. So, the best thing possible would be to just combine the two into one great, amazing, delicious desert. So, I surfed the internet for a while trying to find one, when i finally found it on AllRecipes.com. This great dessert was posted by a dessert lover just like me, and was quoted as "chocolately goodness and a cheesecake." And believe me, this is true. The chocolate is absolutely gooey and delicious. If you add some strawberry preserves on top it makes it delicious. The next time I make it I am going to put caramel on top as well.
INGREDIENTS
1 1/2 cups chocolate cookie crumbs
2 tablespoons white sugar
1/4 cup butter, melted
1/4 cup semisweet chocolate chips
1/4 cup heavy whipping cream
3 (8 ounce) packages cream cheese, softened
1 cup white sugar
1/3 cup unsweetened cocoa powder
3 eggs
1 teaspoon vanilla extract
1 1/2 cups semisweet chocolate chips
1/4 cup heavy whipping cream
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F ( 175 degrees C). Lightly grease a 9 inch springform pan.
In a small bowl, mix together 1 1/2 cups chocolate wafer crumbs, 2 tablespoons sugar, and melted butter. Press onto the bottom and 1 1/2 inch up the sides of the prepared 9 inch springform pan. Bake at 350 degrees F (175 degrees C) for 10 minutes. Allow to cool. Reduce oven temperature to 325 degrees F (165 degrees C).
To Make Filling: In a small saucepan, heat 1/4 cup whipping cream and 1/4 cup chocolate chips, stirring constantly, until chips are melted. Remove from heat.
In a large mixing bowl, beat cream cheese and 1 cup of sugar until smooth. Add cocoa and beat well. Add eggs and beat on low until just blended. Stir in 1 teaspoon vanilla and reserved chocolate mixture until blended. Pour over crust. Bake at 325 degrees F (165 degrees C) for 45 to 50 minutes or until center is almost set.
To Make Topping: In a small saucepan, heat 1/4 cup whipping cream and 1 teaspoon vanilla until just before boiling. Stir constantly and be careful not to boil over. Have 1 1/2 cups chocolate chips ready in a small bowl. Pour in the hot cream and stir with a spoon until smooth. Spread over baked cheesecake and refrigerate overnight.

Spelling Skills or What?

So, people are asking me, how exactly did I get my absolutely fabulous spelling skills? I mean, I never mess up desert and DESSERT. Well, to find out, just ask my third great teacher. You see, my favorite teacher ever is a desert lover like I am. She however, is not a great speller. Therefore, she needed a spelling trick to figure out how to spell dessert. (As opposed to desert.) You see, desert has one s. The desert has many icky creatures such as rattlesnakes, lizards, and frogs. I don't know about you, but I for one certainly don't want a lot of these. However, desserts are amazing. They have two ss's. You want more dessert, so you want more ss's! Its as simple as that!

International Flavor

Amazing desserts can be all over the world. Not only do people enjoy a delicious after-meal snack in the United States, but in Uruguay as well. (Talk about a random country, but hey, they speak Spanish so great for a Spanish report!) My personal favorite Uruguayan (?) desert is Alfajores. Don't bother trying to pronounce it, just spend that time making them delicious. These are actually cookies, but they have a little something extra added to them. Alfahores include caramel and dulce la leche, famous world wide. This recipe is a little complicated, because you also have to make dulce la leche, but the final result is positively yummy.
Dulce la leche (copy and paste):
Ingredients
· 4 cups milk
· 2 cups sugar
· 1 teaspoon baking soda
· 1 teaspoon Vanilla extract

INGREDIENTS:
12 tablespoons butter
1 cup granulated sugar
1 egg
2 egg yolks
2 tablespoons cognac
2 1/2 cups cornstarch (corn flour)
1 cup all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Zest of 1/2 lemon
Dulce de Leche
Grated coconut
PREPARATION:
To make cookie dough: Cream the butter and sugar together, then mix in the remaining ingredients except the dulce de leche and coconut until well blended. Knead on a floured work surface until the dough is smooth and let rest for 15 minutes.
Make the cookies: Roll the dough out to a thickness of about 1/4 inch and cut into 2-inch rounds. Place on a greased cookie sheet and bake in a preheated 300°F oven for 20 minutes. When cool, spread some dulce de leche on the bottom of half the cookies and press another cookie on top, allowing some of the dulce de leche to squeeze from the sides. Roll the sides in the coconut until the sides are covered. Makes about 12 delicious, definitely non low calorie cookies!

On-The Go

Sometimes, like I am now, someone is in a hurry to get something done. They have to go places, or as they say "have places to go, things to do, and people to see." There isn't time to A. make a fancy delicious desert or B. eat one. So, one makes smoothies. Not only are these amazingly healthy but they are a great on the go snack. Also, if you make extra and have to be a place early in the morning they are great for breakfast on the way to work or school. There are millions of recipes for smoothies, but this one is my personal favorite.
AMAZING PINAPPLE-STRAWBERRY SMOOTHI
1 1/2 cup can of crushed pinapple
6 scoops strawberry frozen yogurt
1/2-1 package strawberries
ice

Pack everything into a blender. Then just blend until your desired thickness and enjoy!

Chocolate Chip Cookies

Welcome back! These delicious chocolate chip cookies are extremely easy to make. However, you may be surprised as to where the recipe was found. One day, when getting ready to melt chocolate chips for another recipe, my baking partner (aka my mom) and I found this delicious recipe on the back of the bag. We didn't expect it to be good, but after trying them, we make them again and again. They don't take all day to make and don't take all day to eat either if you have men around the house. They go great with milk and are great to bring for friend's birthdays! Enjoy!
1 cup butter (2 sticks)
¾ cup brown sugar
¾ cup white sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
2 ¼ cups flour
1 12 oz. bag chocolate chips


Mis butter and sugars and fluffy. Add eggs and vanilla and beat until smooth. Add flour and baking soda and mix well. Add chocolate chips.

Bake at 375 degrees for 10-11 minutes. **** I only bake mine 8-9 minutes so they turn out chewy rather than crunchy

Welcome to my amazing, delicious blog! In every entry I will be posting one of my favorite desserts and what it tastes great with. I will also be posting a picture and a recipe. I hope that everyone will try to make these cookies at least once and find them as delicious as I do. However, on a more serious note, there needs to be an allergy warning. Many of the recipes that I use have peanuts, milk, and eggs, the main allergens that many people have. In most recipes, these are key ingredients. I will try to post at least one peanut free recipe, but other precautions must be taken. However, in the milk and eggs allergies, Egg Beaters and Soy Milk might be good alternatives.
